Italian chef Antonio started working at age 14 in working his way up to a 1 Michelin star kitchen in Rome. At 21 he moved to Monaco to work under Joël Robuchon, 2 Michelin star. After spending a couple years mastering the skill and techniques of Michelin Fine Dining as well as the language, Antonio continued his career in London, where he worked at 2 Michelin starred, Le Gavroche
In 2012 Antonio started working for Heston Blumenthal at 3 star The Fat Duck, working his way up to Development Chef and was part of the opening of The Fat Duck in Melbourne, Australia and helped create dishes for the new menu for the reopening of The Fat Duck Bray.
In 2017 Antonio was head hunted by chef Clare Smyth MBE, the first female chef in the UK with 3 Michelin stars, to assist with the hugely anticipated launch of her successful restaurant Core which incredibly gained 3 stars within just 3 years of opening.
Antonio was an essential part of the team has cooked for some of the world’s most important and influential people, cooking for the Royal wedding of the Duke and Duchess of Sussex. Work on 4 hands collaborations around the world with renowned chefs such as Daniel Boulud, Anne Sophie Pic and Andreas Caminada.
Antonio contributed with the opening Oncore, 3 Hats, in Sydney, Australia and being a constant presence and support, he worked on many prestigious and exclusive events.
After 6 special years working for Clare, Antonio’s impressive career has been widely varied, he enjoys cooking for private clients be it a dinner party on a yacht, cooking lessons for a crowd, pop ups, BBQ’s as well as a consultant developing menus and products for the restaurant industry. Antonio has a passion for mentoring and coaching chefs to be the best they can be with his warm friendly approach.
